How is chocolate made?

In chocolate factories this is how they make chocolate. The cocoa beans have to be fermented first, then they are cleaned and roasted. Then winnowing machines shell the cocoa beans turning them into cocoa nibs, which are smaller. The nibs are grinded with a nib grinding machine, that uses steel and stones to grind the nibs into cocoa mass. The cocoa mass is then liquified into what is called chocolate liquor. Rectangular molds hold the chocolate liquor while the hydraulic press squeezes the cocoa butter out of the chocolate liqour. The cocoa butter then goes into the mixing machine with the other ingredients. After the ingredients have been mixed together the chocolate is blended into a smooth paste by a giant eggbeater or heavy rollers. Then the chocolate goes onto a conveyor belt that has molds the get rid of any air bubbles. The chocolate goes through a cold tunnel to harden it into a solid and then it gets wrapped in packaging machines. (moore)
